Spicy Peanut Noodles
Ingredients
- 14 ounces noodles
- 1 tbsp peanut oil
- 4 garlic cloves - grated
- 1 tbsp grated ginger
- ⅔ cup chunky peanut butter
- 2 tbsp Gochujang sauce
- 4 tbsp low sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp brown sugar
- cilantro leaves
Instructions
- Bring a large pot with salted water to a boil, add noodles and cook until al dente according package directions. When ready drain, reserving 2 cups cooking water.
- In the meantime, grate the ginger and garlic cloves.
- Heat peanut oil in a large skillet over medium low. Add garlic and ginger and cook for for 1 minute.
- Stir in peanut butter, Gochujang sauce, soy sauce, rice vinegar and sugar. Pour in 1 cup cooking water. Stir to combine and bring to a simmer.
- Toss in cilantro and noodles. Toss to combine. Add more cooking water if needed. Serve immediately!
