How to perfectly sear salmon fillets
The key to perfectly seared salmon starts with taking the fillets out of the refrigerator 15 minutes before cooking. Pat them dry with a paper towel and season both sides. Heat oil and butter in a large, heavy-bottomed nonstick skillet over medium-high heat, and sear the fillets for 3 minutes per side, adjusting the time based on their thickness. Watch for the sides of the fillets to change color from the bottom up, and flip once the color reaches the center. This method results in tender, juicy, and crispy salmon fillets.
Salmon in dill sauce ingredients and tips
- Salmon: Use fillets of the same size and thickness for even cooking, skin-on is also fine.
- Fresh dill: Use fresh dill instead of dried for the best flavor.
- Carrot: Adds flavor and nutritional value.
- Garlic and onion: Essential flavor enhancers; you can substitute a shallot for the onion.
- Seasoning: A blend of garlic powder, sweet paprika, ground turmeric, salt, and black pepper.
- Flour: Thickens the sauce.
- Vegetable broth: Or use chicken broth as an alternative.
- Cream: Heavy cream for richness and a smooth sauce, half-and-half can also be used.
- Lemon juice: Balances the richness and enhances the flavors.
