  • Pierogi: Use fresh or frozen, regular-sized or mini, with your favorite filling like potato and cheddar, mushrooms or sauerkraut. I used classic pierogi filled with cottage cheese and potatoes.
  • Kielbasa: This smoked sausage adds a garlicky, savory flavor. If unavailable, substitute with Andouille, bratwurst or bacon.
  • Cheese spread: This smooth, creamy blend melts beautifully into the soup. Brands like The Laughing Cow or Kraft Cheese Spread work well. If you can’t find it, swap with cream cheese, a splash of heavy cream or sour cream.
  • Vegetable oil: Used to brown the kielbasa and unlock its flavors.
  • Onion: Effortless flavor enhancer, you can swap the yellow onion for shallot.
  • Garlic: An essential, 1 clove should be enough as Polish kielbasa sausage already contains lots of garlic. Do not use garlic powder, the flavor would never be the same.
  • Carrots: Add color, nutrients, and a subtle sweetness.
  • Savoy cabbage: You can substitute with green cabbage or use other veggies for variety.
  • Chicken broth: The base of the soup, adding rich, comforting flavor. Homemade broth is ideal, but store-bought works just as well.
  • Seasoning: A simple yet flavorful blend of sweet paprika and cumin.
  • Fresh dill: Try not to substitute with dried dill, as the flavors won’t be the same. If dill isn’t your thing, fresh parsley works as a great alternative.

Ingredients 
 

  • 1 tbsp vegetable oil
  • 11 ounces kielbasa - sliced
  • 1 yellow onion - diced
  • 2 carrots - peeled and cut into half-moons
  • 1 garlic clove - minced
  • 1 tsp sweet paprika
  • 1 tsp ground cumin
  • 5 cups chicken broth
  • ¼ head savoy cabbage - cored and chopped
  • 3 tbsp cheese spread - at room temperature
  • 12 pierogi - cheese and potato filling, add more to your own preference
  • 3 tbsp chopped fresh dill
  • freshly ground black pepper

Instructions 

  • Get your prep done: Slice the kielbasa sausages. Peel and cut the carrots into half-moons. Mince the garlic clove and dice the onion. Core and chop the cabbage. Chop the dill.
  • Heat oil over medium in a large pot. Add kielbasa and cook until browned, about 5 minutes. Remove from pot.
  • Add garlic, onion and carrots. Sauté for 3 minutes. Stir in paprika and cumin. Pour in broth and bring to a boil. Add cabbage, cover the pot and reduce the heat to medium low. Simmer for 10 minutes.
  • Remove the lid and stir in the cheese spread. Increase the heat to medium high and add pierogi. Boil until they start to float. (this can take 3-5 minutes for fresh pierogi and up to 8 minutes for frozen).
  • Turn off the heat. Stir in kielbasa, dill and finish off with freshly ground black pepper. Enjoy!
