Can I add protein to the skillet?

Absolutely! Try adding tofu, chicken, beef, shrimp, or bacon for an extra flavor boost. Cook the protein in the skillet first, set aside, and then follow the recipe as written. But there’s no need to add more protein if you don’t want to—dumplings are already quite filling on their own. For bigger appetites, just add more dumplings!

How to serve this fried shiitake and dumpling skillet?

Serve it as a quick lunch or a light dinner. For an impressive starter, just serve three dumplings per person. However you serve it, this dish is sure to wow your friends!

Ingredients for soy glazed shiitakes with dumplings

  • Dumplings: Choose between Chinese potstickers or smaller Japanese gyoza, both are perfect for this dish. The filling is up to you; try chicken, pork, shrimp, or vegetarian options with vegetables, mushrooms, or tofu.
  • Shiitakes: If you prefer other mushroom varieties or a mix of mushrooms work just as well.
  • Vegetable Oil and Unsalted Butter: Used to sear the mushrooms and create a rich, buttery sauce.
  • Scallions: Add a sweet, mild flavor and soften nicely when cooked.
  • Green Peas: Spinach, asparagus, or steamed green beans also work well here for added greens.
  • Garlic: Essential for deep flavor, use freshly minced garlic, and if you love garlic, feel free to add extra!
  • Low-Sodium Soy Sauce: Adds a savory saltiness.
  • Toasted Sesame Oil: A must-have, bringing in a warm, nutty note.
  • Mirin: Complements the soy sauce with a slight tang.
  • Honey: Rounds out the salty soy sauce and tangy mirin. Substitute with sugar, brown sugar, or maple syrup if you prefer.
