One-skillet Kielbasa and Potatoes
Ingredients
- 1 tbsp unsalted butter
- 1 tbsp olive oil
- 1.2 pounds kielbasa - sliced
- 1 onion - diced
- 2 garlic cloves - minced
- 1.7 pounds waxy potatoes - peeled and cut into bite-sized pieces
- 2 cups chicken broth
- 9 ounces green beans - cut in half
- 1 tsp dried dill
- ½ tsp sweet paprika
- ½ tsp black pepper
- ¼ tsp ground cumin
Instructions
- Get your prep done before you start cooking: Peel and cut the potatoes into bite-sized pieces. Dice the onion and mince the garlic cloves. Trim the ends of the green beans and cut them in half. Cut kielbasa into slices.
- Heat oil and butter over medium high, add kielbasa and cook until golden brown. Add onion and garlic, cook for 2 minutes. Remove from skillet.
- Add potatoes, chicken broth and green beans. Bring to a boil, reduce heat to medium and boil for 10 – 15 minutes. Until the potatoes are tender and the broth is almost evaporated.
- Stir in paprika, cumin, black pepper and dill. Return kielbasa to the skillet and cook for 2 minutes. Enjoy!
