The one-pan cooking method is a total game-changer. No need for pre-boiling the gnocchi, no extra pots – just everything in one skillet for maximum flavor and minimal cleanup.

Tuscan gnocchi main ingredients
- Gnocchi: I used store-bought potato gnocchi. You can go with fresh (from the fridge section) or shelf-stable (from the dry pasta aisle).
- Bacon: Brings a salty bite and crispy texture.
- Spinach: Fresh or frozen, both work. If using frozen, make sure to thaw and squeeze out any excess liquid. You can also sub for kale.
- Sun-dried tomatoes: Go for the kind packed in olive oil (usually in a glass jar), they’re softer and way more flavorful than the dry-packed version.
- Garlic and shallot: A must for adding aroma.
- Heavy cream: Gives the dish its luxurious texture.
- Chicken broth: Helps cook the gnocchi right in the pan. You can sub with vegetable broth, but skip plain water – it won’t deliver the same flavor.
- Parmesan: Adds that perfect cheesy finish. Freshly grated is always best.
- Tomato paste: For extra umami and a vibrant color.
- Italian seasoning: Adds layers of herby flavor.
- Salt and pepper: To balance out the dish.

Substitutions and variations
- Swap the sun-dried tomatoes for cherry tomatoes.
- Use pasta instead: Not in a gnocchi mood? This dish also works with regular pasta, tortellini or ravioli.
- Add pine nuts: Toast them in a dry skillet over medium-low for about 5 minutes. Keep an eye on them, they burn fast!
- Boost the protein: Stir in crumbled Italian sausage, chicken, salmon or shrimp.
- Add veggies: Roasted bell peppers, broccoli, asparagus, artichokes or mushrooms all work wonderfully. This dish is super customizable – just use what you love or what’s in your fridge.
- Top it off: Finish with chili flakes, fresh basil or chopped chives.

What to serve with Tuscan bacon gnocchi
- This dish is rich and super satisfying on its own, so I recommend pairing it with something light and fresh: A simple side salad with your favorite leafy greens like kale, arugula or romaine works perfectly. Add a lemony vinaigrette or balsamic dressing for a little zing.
- You can also serve it with garlic bread if you’re leaning all the way into comfort food mode.
Leftovers and storage
- Store any leftover gnocchi in an airtight container in the fridge for up to 3 days.
- To reheat, warm it gently on the stove over low heat. Add a splash of broth or cream to loosen the sauce.

One-Pot Tuscan Bacon Gnocchi
Ingredients
- 5 ounces bacon - cut into lardons
- 4 garlic cloves - minced
- 1 shallot - diced
- ¼ tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 3 tbsp tomato paste
- 1 ½ cups chicken broth
- 2 cups spinach
- ½ cup heavy cream
- 2 pounds gnocchi
- ¾ cup grated Parmesan
- ½ cup sun-dried tomatoes - drained and chopped
- chili flakes - for serving
Instructions
- Get your prep done before you start cooking: grate the Parmesan, mince the garlic cloves and dice the shallot. Chop the bacon into lardons and chop the sun-dried tomatoes into smaller pieces.
- Set a large nonstick skillet over medium high. Add bacon and cook until crispy. Remove from skillet onto a plate layered with paper towel.
- Reduce heat to medium, add garlic and shallot. Sauté for 1 minute. Stir in Italian seasoning, salt, pepper and tomato paste. Cook for 1 minute.
- Pour in chicken broth and bring to a boil. Now add spinach and stir until wilted. Pour in cream and bring to a boil. Nextadd gnocchi and simmer for 2 minutes.
- Reduce heat to medium low and stir in Parmesan. Finally add the sun-dried tomatoes. Finish off with crispy bacon and chili flakes. Enjoy!
