Ingredients 
 

Rotisserie chicken salad

  • 1 pound rotisserie chicken - shredded
  • 1 cucumber - chopped
  • 1 cup black olives - chopped
  • 1 avocado - peeled and chopped
  • 1 cup feta cubes in oil - drained
  • 1 cup basil leaves
  • 4 tbsp sunflower seeds

Honey lemon vinaigrette

  • ¾ cup olive oil
  • ½ lemon - juiced
  • ½ tsp salt
  • ½ tsp coarsely ground black pepper
  • 1 tbsp honey
  • 1 tbsp yellow mustard

Instructions 

  • Get your prep done: Chop the cucumber and avocado in similar bite-sized pieces. Roughly chop the olives.
  • Make the vinaigrette: Combine olive oil with mustard, salt, pepper, honey and lemon juice. Taste and add more lemon or honey to balance out the flavors.
  • To a large bowl, add cucumber, olives, avocado, rotisserie chicken, feta cubes, sunflower seeds and basil. Toss with vinaigrette. Serve and enjoy!
