I loved the combination of flavours here. The spicy marinara matches perfectly with the aubergines.My only problem here is the aubergines didn’t cook properly when fanned out like this. I’d go for a different way of cutting or cooking the aubergines so that they cook all the way through properly. I still mark this recipe highly as once you get the aubergines cooked this is an amazing dish.
really appreciate this, and glad you loved the flavors! Aubergines can be tricky, next time you can slice them thinner so they cook through evenly.
