These loaded Korean chicken sweet potatoes were an instant hit here. Roasted until soft and caramelized, then topped with saucy ground chicken and spicy mayo, they hit that sweet-savory-spicy thing in a very good way.

Pro tip
Roast the sweet potatoes cut side down so they get extra soft and caramelized around the edges. If you want even more color, sear the cut side in a skillet with a little butter before serving.

Ingredients
I keep this one simple. The sweet potatoes are roasted until buttery soft, while the filling comes together on the stove with ground chicken, garlic, scallions, gochujang, soy sauce, rice vinegar, sesame oil, and honey.
The spicy mayo is just as easy. Whisk mayonnaise with a little gochujang until smooth, then spoon or drizzle it over the top.
After that, it’s all about the toppings. I like avocado, a fried egg, chili crisp, and sesame seeds, but this is one of those dinners that can handle a lot of riffs.

Tips for success
- Top with cilantro, kimchi, or pickled red onions if you want to lean even harder into bold flavors.
- For crunch, swap the sesame seeds for chopped peanuts or fried onions.
- Instead of ground chicken, you could use turkey, pork or beef.
- I really recommend keeping the gochujang mayo. It brings everything together and gives the sweet potatoes that extra hit they need.
- You can also add mozzarella and slide the loaded sweet potatoes back into the oven for a few minutes if you want a melty finish.

Make ahead
You can roast the sweet potatoes and cook the chicken up to 1 day ahead. Store them separately in airtight containers, then reheat the sweet potatoes in the oven and the chicken on the stovetop before serving.
Storage
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or in a nonstick skillet until heated through.
Loaded Korean Chicken Sweet Potatoes
Ingredients
Sweet potatoes
- 4 sweet potatoes - medium
- 2 tbsp olive oil - for drizzling
- 1 tsp salt
Korean chicken
- 1 tbsp olive oil
- 1.5 pounds ground chicken
- 4 garlic cloves - minced
- 4 scallions - chopped
- 1 tbsp Gochujang sauce - more or less to taste
- 3 tbsp low sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
Toppings
- 4 fried eggs
- chili crisp
- sesame seeds
- avocado
- scallions
- spicy mayonnaise - ¼ cup mayo + 1 to 2 tbsp gochujang sauce
Instructions
- Preheat the oven to 425°F (220°C).
- Drizzle a baking tray with oil and sprinkle with salt. Cut the sweet potatoes in half lengthwise and place them cut-side down on the tray. Drizzle the tops with a little more oil and sprinkle with salt.
- Transfer to the oven. Roast for 30 minutes, or until buttery soft. Check for doneness and roast for another 10 to 15 minutes if needed.
- While the sweet potatoes are roasting, mince the garlic and chop the scallions.
- Heat the oil in a large skillet over medium-high heat. Add the ground chicken, break it up into small pieces, and cook until browned. Add the garlic and scallions and cook for 1 minute.
- Stir in the gochujang sauce, soy sauce, rice vinegar, honey, and sesame oil. Cook for 3 minutes, or until the chicken is cooked through.
- Assemble in this order: sweet potato, spicy mayo, chicken, then your toppings. Add a little more mayo on top if you like. Enjoy!
