This Japanese ground beef curry is one of my favorite cozy dinners. It’s not the kind of dish you’d find in a traditional curry house, but it hits all the right notes when I want something comforting.

Using ground beef instead of sliced meat keeps the cooking quick and gives the curry a hearty texture that works especially well in a brothy rice bowl. The beef soaks up the sauce, the rice catches all that curry, and suddenly dinner feels a lot more exciting than the effort involved.

A Japanese curry cube does most of the heavy lifting here. I just added a splash of milk, chicken broth, and a few pantry staples, to get a creamy, savory sauce with very little fuss. I make a version of this at least once a month, switching up the protein or vegetables depending on what I have, and it never feels boring.

Japanese curry cubes

Japanese curry cubes are basically a ready-made curry roux. They combine flour, curry powder, and spices into a solid block that melts into broth and turns it into a thick, hearty sauce.

They’re one of those pantry shortcuts I genuinely love because they save you a lot of time. You can find them in Asian supermarkets, larger grocery stores with a good international section, or online. They usually come in mild or hot versions. I tend to go for the spicier ones.

Ingredients

You don’t need much to create a flavor bomb. Ground beef combined with soy sauce and mirin gives the bowl plenty of richness and protein.

Japanese curry often includes onion, carrots, and potatoes, but I made this version with carrot, scallions, and garlic. I use the white parts of the scallions in the pan and save the green tops for serving.

For the sauce, I use Japanese curry cubes dissolved in chicken broth, whole milk, tomato paste, and a little soy sauce. Beef or vegetable broth also work well.

Serving tips

For me, rice is the obvious choice. I love how it soaks up the curry without losing all its texture.

I use basmati here, but white rice, brown rice, udon, lo mein, or even roasted potatoes all work.

For toppings or sides, try my cucumber salad, blanched bean sprouts, peas, corn, roasted broccolini, green beans, or a soft-boiled egg.

Make ahead

You can brown the beef, cook the rice, and make the curry 1 day ahead. Store everything separately, then reheat and assemble the bowls just before serving.

Storage

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.

Reheat gently on the stovetop, adding a splash of water or broth if needed to loosen the sauce.

Ingredients

  • 1 ½ cups basmati rice
  • 1 tbsp neutral oil
  • 1.1 lb ground beef
  • 2 garlic cloves - minced
  • 1 carrot - diced
  • 2 scallions - chopped
  • 2 tbsp low sodium soy sauce
  • 1 tbsp mirin

Japanese curry broth

  • 1 tbsp tomato paste
  • 2 cups chicken broth
  • 1 cup milk
  • 2 Japanese curry cubes - mild or hot

Instructions

  • Get your prep done first: peel and dice the carrot. Chop the scallions, keeping the white and green parts separate, and mince the garlic.
  • Cook the rice in salted water according to the package directions.
  • Heat the oil in a large skillet or pan over medium-high heat. Add the ground beef and sear undisturbed for 1 minute, then break it into pieces.
  • Add the carrot, white parts of the scallions, garlic, soy sauce, and mirin. Cook until the beef is browned and crispy. Transfer to a plate and set aside.
  • Add the tomato paste to the same skillet and cook for 1 minute.
  • Pour in the chicken broth and milk, then bring to a gentle simmer without boiling.
  • Reduce the heat to medium-low. Add the Japanese curry cubes and soy sauce, then simmer for about 5 minutes, stirring until the cubes are fully dissolved. If the curry gets too thick, add a splash of water or broth.
  • Divide the rice among bowls. Pour over the Japanese curry broth, then top with the crispy beef and remaining scallions. Finish with your favorite toppings or vegetables. Enjoy!

What, and how much, can I substitute for the curry cubes?

    1. For the 2 curry cubes, try 2 tbsp butter, 2 tbsp flour, 1½ tbsp curry powder, ½ tsp garam masala, ¼ tsp each turmeric, garlic powder and ground ginger, plus 1 tbsp soy sauce and 1–2 tsp honey or brown sugar. Cook the butter, flour and spices together briefly, then gradually stir in the 3 cups of liquid.
This will be a substitute, rather than an exact match for Japanese curry roux, since brands of cubes are seasoned differently, but still delicious. Happy cooking!
