  • Udon noodles – you can also use egg noodles, ramen noodles, rice noodles, spaghetti or swap out for rice
  • Ground beef – you can use other types of ground meat such as chicken or pork
  • Vegetable oil
  • Garlic – you can easily use up to 6 cloves
  • Scallions – onions are a great substitute
  • Bok choy

Hoisin sauce is a rich, thick sauce that’s sweet, salty, and just a little bit smoky—it adds instant depth to anything you cook. Made from fermented soybeans, garlic, chili, and spices like fennel, it’s a staple in Chinese cuisine and often used in stir-fries, glazes, and marinades.

Hoisin Beef Noodles

Ingredients 
 

  • 10 ounces noodles
  • 2 tbsp vegetable oil
  • 1.3 pounds ground beef
  • 4 garlic cloves - minced
  • 5 scallions - chopped
  • 1 bok choy - chopped

Hoisin sauce

  • 6 tbsp hoisin sauce
  • 2 tbsp low sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch
  • ¾ cup water

Instructions 

  • Get your prep done before you start cooking: Mince the garlic cloves, chop the scallions and bok choy.
  • Prepare the sauce by combining hoisin sauce with cornstarch, water, soy sauce and rice vinegar.
  • Add noodles to a pot with boiling water and cook according to package directions. When ready, drain and run under cold water.
  • Heat oil over medium high in a large skillet or a wok. Add ground beef and break up into pieces. Cook until no longer pink, but don't brown it until crispy.
  • Add garlic and scallions, cook for 1 minute. Stir in bok choy, then pour in the prepared sauce. Simmer for 3 minutes.
  • Toss in noodles and simmer for 1 minute. Serve immediately!
