  • 2 cucumbers - large, sliced
  • 1 avocado - chopped
  • 1 carrot - large, grated
  • 4 scallions - chopped

  • 1 tsp brown sugar
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 3 tbsp low sodium soy sauce
  • 1 tbsp crispy chili oil - more to taste
  • 1 tbsp sesame seeds

Instructions 

  • Get your prep done: slice the cucumbers, chop the scallions, dice the avocado, and grate the carrot.
  • Add everything to a large bowl. Stir in the mayonnaise, yogurt, sugar, sesame oil, rice vinegar, soy sauce, and crispy chili oil. Toss well until everything is evenly coated.
