Use dried wheat noodles, ramen-style noodles, or udon. Even spaghetti works in a pinch. Choose something slurpable that holds onto the sauce.

ground chicken

Lean ground chicken keeps the dish light and weeknight friendly. Once browned, it picks up lots of hearty flavor from garlic, ginger, and the white parts of the scallions.

I season it with soy sauce, hoisin sauce, and a splash of rice vinegar for balance.

Ingredients 
 

Chicken

  • 2 tbsp peanut oil
  • 1 pound ground chicken
  • 3 scallions - chopped, white and green parts separated
  • 4 garlic cloves - grated
  • 1 tsp ginger - grated, optional
  • 2 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 4 tbsp hoisin sauce

Noodles + sauce

  • 12 ounces noodles
  • 4 tbsp peanut butter
  • 3 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 3 tbsp crispy chili oil

For serving

  • chopped peanuts
  • crispy chili oil
  • scallions

Instructions 

  • Boil the noodles according to the package directions. Drain, reserving about 2 cups of the cooking water.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Add the ground chicken, break it into small pieces, and cook until browned.
  • While the chicken cooks, slice the white parts of the scallions and reserve the green parts for garnish. Grate the garlic and ginger. Reduce the heat to medium-low and add the scallions, garlic, and ginger to the chicken. Cook for 1 minute until fragrant. Stir in the soy sauce, rice vinegar, and hoisin sauce. Cook for another 2–3 minutes.
  • For the sauce, combine the peanut butter, soy sauce, rice vinegar, sugar, and crispy chili oil in a large bowl. Add about 1 cup of the hot noodle cooking water and stir until smooth. Toss the noodles with the sauce.
  • Divide the noodles between bowls. Top with the ground chicken and garnish with the remaining scallions, chopped peanuts, and extra crispy chili oil. Enjoy!
