Ingredients 
 

  • 1 tsp avocado oil
  • 1 tbsp ginger - grated
  • 4 garlic cloves - grated
  • 4 scallions - sliced
  • 1 bok choy - chopped
  • 1 carrot - cut into matchsticks
  • 3 tbsp low sodium soy sauce
  • 5 cups chicken broth
  • 20 dumplings - or gyoza or potstickers
  • sesame seeds - for serving
  • chili crisp - for serving

Instructions 

  • Get your prep done before cooking: slice the scallions, keeping the white and green parts separate. Grate the ginger and garlic. Peel the carrot and cut it into matchsticks. Chop the bok choy.
  • Heat the oil in a large pot over medium heat. Add the ginger, garlic, and white parts of the scallions. Cook for about 1 minute until fragrant.
  • Add the bok choy, soy sauce, and carrots. Pour in the chicken broth and bring to a boil.
  • Add the dumplings, sesame oil, and the green parts of the scallions. Simmer for 3 to 5 minutes, or according to the package directions, until the dumplings are tender.
  • Serve right away. Top with chili crisp and sesame seeds. Enjoy!
