Yellow Coconut Chicken Curry

season the chicken with salt, pepper and paprika

slice the mushrooms

mince the garlic

finely chop the shallot

grate the ginger and chop the chili pepper

heat oil and butter in a large skillet

add chicken

cook until golden brown, 5-8 minutes per side

remove from skillet

add mushrooms, cook until they start to release moisture, then add oil

add garlic, shallot, ginger and chili pepper

stir in turmeric, cumin, curry powder and brown sugar

deglaze with chicken broth, simmer for 2 minutes

pour in  coconut milk

add soy sauce, fish sauce and lime juice

add asparagus

add chicken, simmer for 5 minutes

meanwhile, chop the cilantro and scallions
