White Bean and Chorizo Skillet


cut chorizo in  half-moons

mince the  garlic cloves

dice the onions

chop the sun-dried  tomatoes

heat oil from  sun-dried tomatoes  over medium high,  add chorizo,  cook for 3 minutes

add garlic and onion,  cook for 2 minutes

stir in sun-dried  tomatoes, salt,  pepper and oregano

stir in tomato paste

add spinach,  stir until wilted

add white beans  and lemon juice

pour in  chicken broth,  simmer for  5 minutes

turn off the heat,  stir in Parmesan  and top with  chili flakes
