Turkey Guinness Stew

cut turkey fillets into  bite-sized pieces

slice the mushrooms

dice the shallot

mince the  garlic cloves

heat oil and butter  over high,  add bacon,  cook until it  starts to brown

add turkey,  cook for 3 minutes

add mushrooms,  cook for 5 minutes

add garlic and shallot,  cook for 2 minutes

stir in salt, pepper,  thyme, sage  and flour

pour in  chicken broth

add bay leaf  and mustard

pour in  Guinness

bring to a boil,  reduce heat to low,  cover, simmer  for 30 minutes

when ready,  finish off  with parsley
