The Best Chicken Stew

cut the chicken thighs into small pieces

peel and chop  the carrots into  half-moons

slice the mushrooms

finely chop the onions

mince the garlic

chop the parsley

heat a large pot  over medium high,  add mushrooms,  cook until they  release moisture

add oil,  cook until  browned

remove from pot

melt butter,  add garlic, onions,  carrots and  celery stalk,  cook for 3 minutes

add salt, pepper,  paprika and thyme

add chicken,  cook for  3 minutes

stir in flour

pour in  chicken broth,  bring to a boil

cover, simmer  for 15 minutes

add mushrooms  and parsley,  simmer uncovered  for 5 minutes
