Thai Inspired Beef Stew

chop the carrots

thinly slice the shallots

mince the garlic

heat oil and butter over high add half of the beef

place in a single layer, sear for 3 minutes, add the remaining beef, cook until brown  on all sides

add carrots, shallots and garlic, cook for 2 minutes

stir in cumin, coriander, turmeric, soy sauce and cornstarch

pour in beef broth

stir in red curry paste

cover, transfer to the oven, cook for 1h30 at 350°F/ 180°C

next, add potatoes and coconut milk

return to the oven, cook for 30 minutes
