Spinach and Bacon Pasta with Ricotta


mince the garlic

chop the onion

boil pasta al dente  in salted water

heat oil over  medium high

add bacon

cook until crisp & golden brown

cook until crispy

add garlic and onion,  cook for 2 minutes

add salt, pepper,  oregano, paprika  and red pepper flakes

add spinach

stir until wilted

pour in cream

stir in ricotta

scoop up 1/4 cup cooking water

drain the pasta

toss with sauce

add a splash of  the cooking water
