Spicy Salmon Poke Nachos


cut tortillas in 8 wedges

chop the scallions

pat the salmon dry

slice salmon into cubes, season with salt & pepper

make spicy sauce: combine mayo, mirin, soy sauce, sriracha, sesame oil and garlic

heat oil over high, place salmon in a single layer, sear undisturbed for 30 seconds

stir gently and cook for 30 seconds more

transfer to a bowl, wipe the skillet clean with a paper towel

heat oil over medium, pace tortilla wedges in a single layer

fry until golden brown

transfer to a plate layered with paper towel, repeat with the remaining wedges

combine salmon with 3 tbsp spicy sauce and scallions

place chips in a bowl,  top with salmon,  spicy sauce, sriracha, scallions and furikake
