Spicy Coconut Curry Ramen


grate the garlic and ginger

tear the shiitakes  into small pieces

heat sesame oil,  over medium,  add shiitakes

cook until they  start to brown

season with salt and pepper, remove from pot

add oil,  garlic and ginger, cook until fragrant

deglaze with  chicken broth,  bring to a boil

add turmeric, soy sauce and  fish sauce,  Thai red curry  and sambal oelek

add coconut milk

add a squeeze  of lime juice

add ramen noodles

cook for 2 minutes, serve immediately
