Spanish Potato Soup with Chorizo

cut potatoes in bite-sized pieces

deseed and chop the bell pepper

chop the carrot

finely chop the onion

mince the garlic

chop the parsley

slice the chorizo

heat oil over medium high, add chorizo, cook for 3 minutes

add bell pepper, cook for 2 minutes

add onion and garlic, cook for 2 minutes

stir in carrot, salt, pepper, cumin,  oregano, paprika  and cayenne pepper

add tomato paste, stir until combined

add flour, stir until incorporated

add potatoes and pour in chicken broth

bring to a boil, cover, simmer for 15 minutes

add cream and parsley, simmer for 3 minutes more, serve!
