Spaghetti alla Nerano

mince the garlic

thinly slice the zucchini

cook spaghetti until 2 minutes before al dente in generously salted water

heat oil, place 1/2 of the zucchini in a single layer

fry until crispy and gold on both sides

remove from skillet and drain on paper towels

repeat with the remaining zucchini

discard the excess oil and wipe the skillet clean

add oil and garlic, cook until fragrant

add 1/2 of fried zucchini, season with salt & pepper

add 1 ladle  cooking water

add cold butter, stir until melted

add spaghetti and a ladle cooking water, cook for 1 minute

stir in basil and add more cooking water

stir in provolone

finish off with remaining zucchini, black pepper and chili flakes
