Sausage and Tomato Pasta alla Carbonara

finely chop the shallot

mince the garlic

remove casing from Italian sausage, chop into small pieces

heat a large skillet over medium high, add guanciale

add salt, pepper, sage and red pepper flakes, cook until golden brown

add Italian sausage, cook for 3 minutes

add garlic and onion, cook until soft, 2 minutes

meanwhile, cook rigatoni

add puréed tomatoes, simmer for 10 minutes

in the meantime, beat egg yolks  with Parmesan

scoop up 1 cup cooking water

drain rigatoni

add a splash of cooking water to the egg yolk mixture

add rigatoni, toss to combine

add 1/2 cup cooking water

turn off the heat, stir in egg yolk mixture

finish off with  black pepper and red pepper flakes
