Salmon with White Wine Sauce

pat the salmon fillets dry,  rub both sides with  Cajun seasoning

chop the leek

mince the  garlic cloves

chop the parsley

heat oil and butter  over medium high,  add salmon fillets

sear 3 minutes  per side

remove from skillet

add leek and garlic,  sauté for 2 minutes  over medium

stir in salt  and pepper

deglaze with  white wine,  simmer for  3 minutes

add parsley  and cream  simmer for  2 minutes

stir in Parmesan,  simmer for 1 minute

add salmon,  simmer for  3 minutes

top with crayfish,  parsley and  black pepper
