pat the salmon fillets dry
season both sides with salt and black pepper
mince the garlic
finely chop the onion
heat oil and butter in a nonstick skillet
add salmon fillets
sear, about 3-4 minutes per side
remove from skillet
add garlic and onion, cook until soft
stir in chili pepper, anchovy, spices and tomato paste
deglaze with chicken broth
pour in crushed tomatoes, simmer for 5 minutes
meanwhile, chop the parsley
add spinach, simmer for 2 minutes
