Roasted Garlic Feta Pasta

cut off the top of the garlic head

place feta, sun dried tomatoes and their oil in a baking dish

season with salt, pepper, chili flakes and dried onion, place garlic cut-side down

sprinkle with lemon juice, add thyme sprigs, bake for 20 minutes at 400°F/ 200°C

meanwhile, cook pasta al dente in salted water

when ready, scoop up 1/2 cup cooking water, drain the pasta

get thyme leaves off the stalks, squeeze out the garlic cloves

crush garlic  with a fork toss to combine

add pasta  and 1/4 cup cooking water toss to combine
