Red Pesto Pasta with Mushrooms

mince the garlic, slice the mushrooms, chop the sage, cut the tomatoes into smaller  pieces

add oil, garlic and pine  nuts to a saucepan sauté for 3-4 minutes

add tomato paste and sun-dried tomatoes, cook for 1 minute

add red pepper flakes and balsamic vinegar

stir in Parmesan, blend into a chunky paste

heat oil in a large skillet

cook the pasta

add mushrooms, cook until golden brown

add butter, lemon juice and sun-dried tomatoes

heat oil in a skillet, add breadcrumbs

toast until golden, add sage, salt & pepper

add pasta to mushrooms and stir in red pesto

add a splash of cooking water
