Red Pesto Mascarpone Pasta

finely chop the shallot

mince the garlic

chop the parsley

cook pasta in generously salted water

add oil, garlic and shallot to a large skillet

cook for 3 minutes

add salt, pepper, sage and chili flakes

add red pesto, bring to a simmer

stir in mascarpone

scoop up 1 cup cooking water, add 1/2 cup to the sauce

simmer for 5 minutes

stir in Parmesan and parsley

drain the pasta add to the sauce

toss to combine, top with black pepper and red pepper flakes
