Potato and Sausage Stew

cut potatoes into bite-sized pieces

chop the bell peppers

finely chop the onion

mince the garlic

chop the carrots

slice the sausages

heat oil over medium, add sausages, cook until golden brown, about 5 minutes

add garlic and onion, cook for 2 minutes

add bell peppers, sauté for 3 minutes

stir in salt,  pepper, paprika and  Italian seasoning

add carrots and potatoes

pour in chicken broth, add bay leaves, cover and simmer for 15 minutes

next, add puréed tomatoes and tomato paste

cover, simmer for  10 minutes until potatoes are tender

finish off with black pepper, chili flakes and parsley
