Poached Cod in Peppery Tomato Sauce

finely chop the onion
mince the garlic
roughly chop the green peppercorns
chop the parsley
heat butter over low, add onion, garlic and green peppercorns, cook for 3 minutes
stir in salt, pepper, thyme and sugar
stir in tomato paste
add tomato purée cook for 5 minutes
lay cod fillets in the sauce
season with salt and pepper, cover, simmer for 6-8 minutes
when ready, top with parsley, black pepper and chili flakes
