Pasta with Sun-Dried Tomato Ricotta Pesto

add ingredients for the ricotta pesto to your food processor

purée while adding oil

blend until smooth

mince the  garlic cloves

boil pasta al dente  in salted water

heat oil over  medium high

add pancetta,  cook until it  starts to brown

add pine nuts,  cook for 5 minutes

add garlic, cook until  fragrant

add ricotta pesto, stir until combined

drain the pasta,  reserving 1/2 cup cooking water

add pasta and  cooking water,  toss until  combined
