One Skillet Creamy Chicken and Rice

season chicken on  both sides with salt, pepper and paprika

finely chop the onion

mince the garlic

chop the parsley

heat oil and butter over medium high, add chicken

cook 5 minutes per side

remove from skillet, cover with foil

add garlic and onion, cook for 2 minutes

add salt, pepper, Italian seasoning and rice, cook for 1 minute

add chicken broth, bring to a boil

simmer over low until broth is absorbed, for 8 minutes

stir in mascarpone

stir in Parmesan

return chicken to the skillet, simmer for 3 minutes

finish off with parsley and black pepper
