One-Pot  Pork and Rice

slice the mushrooms

cut carrots into  half-moons

finely chop the onion

mince the garlic cloves

cut pork into thin  bite-sized pieces

heat your pan over  medium high,  add mushrooms,  cook until they  release moisture

add oil,  cook until browned, remove from pan

heat oil and butter,  add pork

place in a single layer,  sear for 2 minutes,  then cook until  it starts to brown

add onion, garlic  and carrots,  cook for 2 minutes

stir in salt, pepper,  cumin, paprika  and thyme

stir in rice

add chicken broth,  bring to a boil,  simmer for  10 minutes

add mushrooms,  simmer for 5 minutes more

finish off with parsley  and chili flakes
