One Pot Lasagna  with Meatballs

finely chop the shallot

mince the garlic

dice the carrots

remove casings from sausages, roll into meatballs

heat oil and butter in a large heavy bottomed skillet

add meatballs

brown on all sides, about 6 minutes

remove from skillet

add shallot and garlic, cook for 2 minutes

stir in spices

add carrots, cook for 1 minute

deglaze with white wine, simmer for 2 minutes

add chicken broth, bring to a boil

add crushed tomatoes

stir in cream cheese

add lasagna noodles, push down to submerge

simmer for 15 minutes, stir occasionally

add meatballs and their released juices

top with cheddar, mozzarella and Parmesan

sprinkle with black pepper & red pepper flakes, cover and simmer for 10 minutes

sprinkle with parsley, let stand for 5 minutes

alternatively, place  under the broiler for a  golden-brown top
