One Pot Creamy Garlic Mushroom Orzo

tear shiitakes and oyster mushrooms into smaller pieces

thinly slice  the mushrooms

finely chop the shallot

mince the garlic

chop the parsley

heat a large skillet over high, add mushrooms

cook until they release moisture

add oil and soy sauce, cook until golden brown

remove from skillet

add garlic and shallot, cook for 2 minutes

add Italian seasoning, pepper and orzo, toast for 1 minute

pour in white wine cook until evaporated

add chicken broth

bring to a boil, simmer over medium low for 10 minutes

stir occasionally

stir in mascarpone

add Parmesan

add mushrooms and parsley

finish off with black pepper and chili flakes
