One Pot Chickpea and Chorizo Rice

slice the chorizo

dice the onion

mince the  garlic cloves

heat oil and butter  over high,  place chorizo  in a single layer

cook for 3 minutes,  remove from skillet

discard  excess grease,  leaving 2 tbsp  in the skillet

add onion and garlic,  cook for 2 minutes  over medium low

add rice,  sweet paprika,  smoked paprika,  cumin, salt  and pepper

pour in broth,  bring to a boil,  simmer for  10 minutes

meanwhile,  chop the spinach

add spinach to rice,  stir to combine

add extra broth  or water, if needed

add chickpeas and  lemon juice, simmer  for 5 minutes

stir in chorizo,  serve!
