One Pot Chicken 'Nduja Bake

combine chicken thighs  with salt, pepper,  paprika and  garlic powder

finely chop  the onion

mince the  garlic cloves

heat oil and butter  over medium high,  add chicken thighs  skin-side down,  sear for 2 minutes

reduce heat to medium,  sear thighs for  10 minutes, move around to prevent  from sticking

turn, sear  for 5 minutes

remove from skillet

discard excess fat,  leaving 2 tbsp  in the skillet

add onion and garlic,  cook for 3 minutes

add nduja and  tomato paste

stir and cook  for 2 minutes

add thyme and  chicken broth,  simmer for  2 minutes

stir in Parmesan

add chickpeas,  potatoes and  chicken thighs

add the released  chicken juices

bake for 20 minutes  at 400°F/ 200°C, then 20 minutes more at 320°F/160°F
