One-Pot  Chicken and Rice

massage chicken  with yogurt and  Cajun seasoning

deseed and dice  the bell pepper

dice the red onion

mince the  garlic cloves

heat oil and butter  over medium,  add chicken

cook 5 minutes  per side

remove from skillet

add onion, garlic  and bell pepper, cook for 3 minutes

stir in salt, pepper, paprika, oregano,  chili flakes and  tomato paste

stir in white rice

pour in  chicken broth

bring to a boil, reduce heat, cover,  simmer for 8 minutes

stir occasionally,  add more broth  if needed

add chicken,  cover, simmer  for 5 minutes

remove the lid, bake for 20 minutes at 400°F/ 200°C
