Mozzarella Stuffed Chicken in Creamy Tomato Sauce

slice the chicken through the middle lengthways

layer each breast with Parma ham, mozzarella and sun-dried tomatoes

seal with toothpicks

coat both sides with spices

mince the garlic

finely chop the shallot

heat oil and butter in a large nonstick skillet

add chicken

cook for 8 minutes  per side

remove from skillet

add garlic and shallot, cook until fragrant

deglaze with vodka, stir to release the brown bits, cook for 2 minutes

stir in tomato paste

add spices

pour in chicken broth

add cream

stir in Parmesan and sun-dried tomatoes

add chicken to the sauce, simmer until heated through

top with black pepper, thyme, parsley and chili flakes
