Moroccan Meatballs in Tomato Sauce

finely chop the onion

mince the garlic

roughly chop the parsley and cilantro

slice the roasted bell peppers

add ingredients for the meatballs to a bowl

mix until just combined

roll into balls

heat oil and butter in a skillet

add meatballs

brown on all sides, turning frequently, about 8 minutes

remove from skillet

add onion and garlic, cook about 2 minutes

add spices, cook for 1 minute

stir in tomato paste

poor in beef broth, simmer for 2 minutes

add puréed tomatoes

stir in roasted peppers

add meatballs, simmer for 5 minutes

meanwhile, cook pearl couscous or rice

stir in parsley, cilantro and black olives

drain the couscous

top with  red pepper flakes, black pepper and parsley
