Miso Roasted Broccoli Cheddar Soup


roughly chop the broccoli heads

thinly slice the carrots

combine miso paste with hot water

add oil, melted butter and lemon juice

add broccoli and carrots, toss to combine

place in a baking sheet, bake for 15 minutes at 400°F/200°C

finely chop the onion

mince the garlic

grate the  cheddar cheese

heat oil in a pot, add garlic and onion, cook for 2 minutes

stir in pepper, paprika and Italian seasoning

add half of the roasted broccoli and carrots

stir in cornstarch

pour in chicken broth

add soy sauce, bring to a boil, cover and cook for 5 minutes

add coconut milk

turn off the heat, mix until smooth

gradually stir in  grated cheddar

add the remaining broccoli and carrots

simmer for 5 minutes
