Linguine with Creamy 'Nduja Tomato Sauce

mince the  garlic cloves

dice the shallots

chop the sun-dried tomatoes

boil linguine al dente  in salted water

heat oil over  medium low

add garlic and shallots, cook for 3 minutes

stir in  tomato paste

add salt, pepper  and thyme

stir in 'Nduja

add lemon juice  and sun-dried tomatoes

scoop up 1 cup cooking water

pour in 1/2 cup cooking water

add cream

drain linguine

stir in Parmesan

add parsley  and linguine, toss to combine

finish off with  black pepper,  serve immediately
