Lentil Curry  with Chicken

season chicken thighs  with salt, pepper,  paprika and  garlic powder

grate the ginger

mince the  garlic cloves

dice the onion

heat oil and butter  over medium high,  add chicken thighs

sear 5 minutes  per side

remove from skillet

reduce heat  to medium,  add garlic, ginger  and onion,  sauté for 3 minutes

add rinsed lentils

pour in  chicken broth  and coconut milk,  bring to a boil

add garam masala,  chickpeas and  lime juice,  simmer for 10 minutes  over low

add chicken,  simmer for  10 minutes more

top with  chili flakes,  black pepper  and cilantro
