Lemon Chicken with Pearl Couscous


combine chicken thighs  with cumin, turmeric,  garlic powder, paprika,  salt and pepper

cut zucchini into  half-moons

dice the onion

mince the  garlic cloves

chop the parsley

zest the lemon

heat oil and butter  over medium high,  add chicken

sear 5 minutes  per side

remove from skillet

add zucchini,  cook for  3 minutes

add garlic, onion  and lemon zest,  sauté for 2 minutes

stir in  pearl couscous

pour in chicken broth,  bring to a boil,  simmer for 5 minutes  over low

stir in parsley  and lemon juice

add chicken

add the released  juices, cover, simmer  for 5 minutes

top with  black pepper  and parsley
