Korean  Gochujang  Chicken


cut chicken into bite-sized pieces

add soy sauce, sugar, sesame oil, rice vinegar, lime juice, ketchup and guchujang

add ginger and garlic, massage mixture into chicken

chop the carrot

cut baby corn into bite-sized pieces

roughly chop the  scallions

cook rice in  salted water

heat oil over high, add 'just' the chicken, set excess sauce aside

fry undisturbed, 2 minutes, then cook until caramelized

add carrot and corn, cook for 2 minutes

pour in excess sauce, cook for 5 minutes over medium

stir in scallions, serve!
