Jerk Salmon in Roasted Pepper Coconut Sauce

finely chop the parsley

finely chop the onion

mince the garlic

chop the roasted peppers

chop the scallions

combine oil, salt, jerk seasoning, dried oregano and parsley

coat both sides of the salmon fillets with  the mixture

heat butter over medium high, add salmon fillets

add the excess seasoning mixture

sear 3 minutes  per side

remove from skillet

add onion and garlic, cook for 3 minutes

add jerk seasoning, salt, roasted peppers and scallions, cook for 2 minutes

add coconut milk and lemon juice, bring to a boil, simmer for 5 minutes

add salmon, simmer for 3 minutes

finish off with scallions and chili flakes
