Italian Sausage Ragu

peel and dice the carrot

finely chop the onion

mince the garlic

remove casings from Italian sausages

add oil, garlic and onion to a large pot, cook for 2 minutes

add sausages

break up into pieces, cook until brown

add carrot and spices, cook for 1 minute

add red wine, simmer for 2 minutes

add beef broth and tomato paste, simmer for 3 minutes

poor in crushed tomatoes, simmer for 15 minutes

meanwhile,  cook the pasta

chop the parsley

drain the pasta

add parsley and pasta, toss to combine
