Honey Orange Salmon

finely chop the shallot

mince the garlic

twist the flesh or the oranges to extract juice, add lime juice  and cornstarch

pat the salmon fillets dry, season both sides with salt and pepper

heat oil and butter over medium, add salmon

sear, 3 minutes per side

remove from skillet

add shallot and garlic, cook until fragrant

add prepared orange juice, bring to a simmer

stir in honey, soy and fish sauce

add salmon, simmer for 3 minutes

top with rosemary, black pepper, hazelnuts and orange zest
